This biodynamic Syrah is produced only in exceptional years. It is grown in the area of Cortona at 720 metres on a mountain with rocky soils and matured at the peak of the de' Canonici vineyard. No pesticides, herbicides or chemicals have been used. After de-stemming, some grapes are left whole while the rest is foot-pressed. Fermentation takes place in wood and concrete vats without any pumping and without any added yeast, sulphur or temperature control. The wine is aged 14 months before bottling without filtration. It is then aged a further 30 months in the bottle.
