This biodynamic Syrah is grown in the area of Cortona on two hills facing south and south-east. The soils are a mixture of sand and clay with some calcerous layers. The vineyard is at 310 metres above sea level. No pesticides, herbicides or chemicals have been used. After de-stemming, some grapes are left whole while the rest is foot-pressed. Fermentation takes place in concrete vats without any pumping and without any added yeast, sulphur or temperature control. The wine is aged 14 months before bottling without filtration.
