The grapes were handpicked at the optimum stage of ripeness from throughout September. Gentle de-stemming and crushing. Cold soak at 5°C during 72hours, including 15% saignée to concentrate the musts. Temperature controlled fermentation and maceration, in stainless steel tanks during 15-18 days, beginning at 18-20°C during the first 2/3 and finishing at 25-26°C. The wine has been aged in French oak barrels for 6 months. The wine was bottles after fining and filtration.

The wine making team has no geographical limitations, continuously searching out vineyards throughout the entirety of Spain's wine regions looking for old vines with low yields and quality fruit. Using this criteria, Hammeken Cellars has acheived award winning wines in more than 14 different Spanish wine regions.
