The grapes are grown over a calcareous marl and sandstone soil in the middle slopes between 220 to 360 metres above sea level. The gradient of the slopes are up to 60% and facing southeast, south, southwest and west. All the grapes were hand-harvested. All the grapes were stored at low temperature on its skins for flavor extraction before starting the fermentation in temperature-controlled steel tanks for 50 days. Selected native yeast was used.
